Catbalogan City was founded or settled by priests of the Jesuit Order (Society of Jesus) sometime in October 1596 and became the cabecera (capital) of the entire island of Samar. Friar Francisco de Otazo, S.J., the first missionary to teach the Catholic faith to the people of Catbalogan, arrived in the Philippines in 1596 and created the Catbalogan Mission. The peanut paste is then added to a generous mix of sauteed onions, garlic, and other spices. While the sauce is getting cooked, the pork is boiled on the side for about an hour or until the meat (especially the fat) becomes tender. To ensure quality taste, it should be cooked under firewood instead of gasoline.  Once everything is ready, a homemade lumpia wrapper is set out, a gen
